Bread is mostly vegan (double check for some varieties), offers soy milk in all drinks, often the soup of the day is vegan (it will say on the board), and there is an option to make your own sandwich. Most ingredients locally sourced, and many are organic. Open Mon 7:00am-4:00pm, Tue-Sat 7:00am-6:00pm, Sun 8:00am-6:00pm.

Nice bread selection, no real vegan options. - Edit
The day I went all varieties of bread were vegan. Unfortunately the only meal option is to make a build your own sandwich with veggies. I'm sorry but charging $9 for 2 pieces of bread with a quarter of the veggies you would get with a salad is not an option.
