usual Jay restaurant but still good! - Edit
because of its great location pretty near to the train station we checked it out. The staff was overly friendly and super happy to serve us! Unfortunately they didn't speak English. Food was pretty good, although nothing special. Still a good option for any vegan searching for something more in Phitsanulok than street food.
Pros: Cheap, very friendly staff, Easy to find, good location
