wonderful hot pot!

As already stated, only the mushroom broth can be made vegan at this time. The wait is typically 1.5-2 hours, but you can get in line in advance on yelp. I would suggest getting in line online before leaving.
I had the king oyster mushroom, udon noodles, bok choy, seaweed knots, and tofu. Even non-vegans at my table enjoyed my side of broth!
Definitely go to the sauce table found on the right side of the restaurant. I personally got the soy sauce, sesame oil, green onions, garlic, and chili oil.

Pros: Very customizable besides broth

Cons: Only one broth able to be made vegan, Long wait, Expensive

Vegan hotpot does exist in Chicago

This place is very popular. Weekend evenings, prepare for a 2 hour wait for a table. Best to go during the week or at earlier hours.
Staff were incredibly helpful and knowledgeable.
Only the mushroom broth can be made vegan at this time, the PDF menu on the website is outdated FYI: it states tomato can be all-vegetable. We were told that the current tomato paste has fish sauce in it so it can no longer be made free on animals. The physical paper menu does reflect this.
You can select whatever vegetables, mushrooms, tofu, noodles you want, and can cook them as you desire. The menu does offer cook times for each item as a guide, but you of course have the freedom to cook as little or long as you would like.
If your eyes are bigger than your stomach, you can take home your remaining vegetables and broth to cook at home.
The mushroom broth just alone was quite good. The waitress suggested to us that we can use the sauce bar to flavor a second (or third) mush broth to give us different one, since mush is the only vegan option. Next time I come I will definitely go for three and get more creative.
The place is cute, it is designed to look as though you're sitting outdoors, with pigeons and pandas adorning the rooftops, railings, and floors.
