Small local coffee shop with a few different vegan options. Employees are kind and service is fairly quick. The fruit and oat bar with the maple cinnamon latte (substituted almond milk) was so good!

Great place close to I-81 - Edit
The Gallo Pinto was delicious and a nice change from traditional breakfast fare. I just wish they would add more vegan options.

Pros: Gallo Pinto can be made vegan , Close to I-81, good place to stop on road trips, Pleasant atmosphere
