Serves meat, vegan options available. Vegetarian pizzas, like the "save the meat" and "meatless mussolini" pizza can be ordered with vegan cheese. Or you may build your own pizza. There's also a "veg head" sandwich that you can order without parm. A hummus appetizer is vegan as-is. Open Mon-Sun 11:00am-9:00pm.

Definitely the best (tbh only) vegan options in town. They have vegan cheese for a build your own pizza- the Detroit-Style means heavy on the cheese, so if that’s not your thing, try modifying a sandwich. I wish there were more vegan choices on the menu, but I’ll take what I can get for now.

Good options in a sea of nothing else! - Edit
Redstone is located in a very rural, yet beautiful, part of Colorado. There is no cell reception here and really no other vegan options (let alone restaurants) around. They do pizzas, salads, sandwiches that can be made vegan by subbing or leaving items out. Note that they do serve meat and cheese on much of their menu. We go two pizzas with the vegan cheese and a veggie sandwich (without cheese) and all was very good. They have gorgeous riverside seating plus shaded seating on their patio. Very nice people and a great spot to grab drinks as well (and the outside seating is dog friendly).
