Great option - Edit
They have six options in their Vegan/Vegetarian menu but only one that comes fully vegan with no alterations. I got the vegan bowl and the portion was huge, so I was excited to have it for lunch the next day too. The other options look as though they could easily be vegan if you skip the queso.

Plaza Azteca was awesome. The service was impeccable, the food spectacular. I had the Vegan Bowl and had to bring 1/2 of it home because it was so big. We had the table side guacamole, so good!

Delicious Vegan oil free enchiladas - Edit
Staff is always friendly. Food comes quickly. I love their vegetarian enchiladas which are made with steamed vegetables and corn tortillas. Ask for no sauce or ask for salsa for a vegan version. Delicious!
