Pistachio Turron is very good and there are a few more vegan varieties. I would say they fall on the "accidentally vegan" end of the spectrum though, most of their products are not and the staff don't have the ability to discuss the products in depth enough to communicate what is and isn't vegan, however all their products are listed on their site and vegan options are marked. Good option to try something traditional and local but read up in advance.
I wouldn't say this place doesn't cater for vegans, as they do have some varieties of turrón that are suitable for us (whether by accident or not). In this case I had the turrón with pistachio, which was very nice. I also tried the almond horchata, which I enjoyed greatly though not as much as the "real" thing. Lastly, I'm told they also have other vegan kinds of turrón: marzipan (which staff wrongly assumed would not be vegan), marzipan with fruit, coconut, and dark chocolate with almonds. When in season, I would love to try the "a la piedra" variety.
