This restaurant opened last year, and it's a good addition to Hillsborough's dining scene. The pizzas are brick oven, and they have both vegan cheese and house-made vegan sausage. I ordered the Spicy Italian Sausage & Peppers pie, substituting the vegan ingredients, and enjoyed being able to taste such traditional flavors in a plant-based meal. The peach gazpacho, a seasonal special that we split as an appetizer, was sublime. What impressed me most was the service, which was attentive without being cloying. Cornicione pays its employees a living wage, so I'm not surprised by their professionalism. Because you are not obligated to tip, that balances out the relatively costly menu. I'll be coming back, for sure.
