Extensive vegetarian options - Edit
Make sure you ask for the vegetarian menu! I had the lemongrass tofu and it was excellent. Quite spicy but managable

Awesome Vietnamese place with separate veg menu - Edit
This place is really good generally full. The have a separate vegetarian menu which you can ask for in person (I haven't seen it online). Good for dine in and take out, but I don't think they do delivery. Their pho is the highlight, ranking among the best vegan pho I have had. The other standouts are summer rolls and the Lemongrass Tofu. They are also flexible to make stuff off the menu, like a Tofu Banh Mi (make sure to ask for no dairy).
