Vegan pho didn’t work - Edit
We had the Pho and requested it vegan. The flavors just didn’t work. It was like they just pulled the meat and subbed random veggies. It tasted off.

Few Options, Poor Service - Edit
We went to Pho Tres Bien Express and had an unfavorable experience (address below), hopefully other locations are different. We went on a Sunday evening.

When we walked in, we inquired about their vegan options and the staff member said 'this is the only one' and showed us a picture of a salad and she said we could remove the meat. There were summer rolls with tofu on the board behind her so it was obvious there were other options (we aren't a fan of summer rolls). We inquired about another item and asked if it had fish sauce in it. She seemed confused by the question and replied that we could get fish sauce on the side. It seemed like the staff member felt our questions were a bit of nuisance.
They didn't have an actual menu to review but rather a photo book and some listed items on the chalkboard behind the counter. It didn't seem like the same as the HappyCow description. Maybe if we got a different staff member who was more knowledgeable or maybe if we went to another location it would be better, not sure.
The experience resulted in us walking out and looking for alternate vegan options.
