I am so happy this is here!!! Traveling as a vegan is difficult, so this is truly amazing. I got the breakfast sandwich, which was delicious! It says on Happy Cow that they close at 2:00 pm, but I ate here during my layover at 8:30 pm, so the hours should be updated accordingly. All of the food on their menu is vegan, however, there is a grab-and-go stand that they operated that serves non-vegan food. I saw a non-vegan caesar salad and a wrap with turkey in it. Even though these items are not made by Kure, you purchase them at their counter, making this is a non-vegan establishment.

Finally some excellent vegan airport food - Edit
I had a protein shake and breakfast burrito. Great price and delicious burrito. The outside was toasted and the inside was flavorful and fresh.
