My boyfriend and I went to Pablo's while waiting for a movie to start hoping to grab a bite to eat. Their menu doesn't specify that anything is vegetarian, only "veggie." I asked the hostess if they used lard in their beans or tortillas. She went to ask the kitchen staff and returned saying that she thinks they do. This does not sound vegetarian-friendly to me. We did not order anything since they don't even know if the food they offer is vegetarian.

A Few Vegetarian Options - Edit
Pablos has a vegetarian section on their menu and my favorites are the veggie burrito and the veggie quesadilla. They use onions, mushrooms, squash, zucchini, tomatoes, and broccoli in both. Their chips and salsa are really good too. The staff is very friendly and they have a nice area to eat outside, but when they get busy, it can sometimes take a while to get your ticket and pay.
Cons: people can smoke outside
