This would be 4 stars in a smaller city but 3 stars for Seattle because there's better options. They have decent vegan options, including one desert, and I tried most. The chorizo taco was completely flavorless, but the other ones (bahn mi and cauliflower) were quite good. Dessert mouse was the highlight, get it for sure. Horchata was too sweet.

Super tasty kale bowl - Edit
Granted, it didn’t have a ton of kale, but the roasted mushrooms in the dish were to die for. And the chocolate mousse dessert cannot be adequately described. So good.

Solid venue and nice seating both indoors and out, and friendly staff even on a busy Friday evening. Vegan food was top notch. Was worried the tacos would be only single ones per order (they were) but with the nachos being so large, was not a problem at all - couldn't finish what I ordered! From what I saw, primary as-is vegan options were nachos, two tacos, and a kale-mushroom burrito.

I loved my dinner at Pablo y Pablo! I got a half order of the vegan nachos (it was huge!) and they were delicious. The best nachos I’ve had since No Bones closed. They also had a ton of yummy drinks and unique margaritas. I loved that we were able to eat outside too. Tip: call ahead and get your name on a waitlist since it gets busy.

Amazing Vegan Tacos & Nachos - Edit
Love coming here as a great place for both vegans and non-vegans to dine together. They put thought and effort into the vegan options too (so I wish there were more!!).

We love this place even though they only have a few vegan options—but the ones they do have are great! The charred broccoli taco with cashew cheese is our favorite! Really good flavor! They have a soy chorizo that you can get on nachos with cashew cheese or on a taco. Both are very tasty!

While this place doesn’t have a huge vegan menu, the options are so delicious that it easily makes up for it. Pro tip: try the vegan nachos and add charred broccoli. And chocolate mousse for dessert!

Excellent vegan tacos! - Edit
I had the vegan chorizo taco and charred broccoli taco with cashew cheese. Both were so delicious I wanted another! I didn’t see they had vegan nachos and vegan bananas foster until I’d already stuffed myself. I’ll definitely be back. I gave them four stars since the drinks were pretty weak (in all aspects).
