Jackfruit asada and queso planta, soy oil and salt - Edit
Shredded jackfruit asada is currently the sole plant-based protein option. Plant-based queso is also delicious. My JackAsada Clasico Burrito also includes whole-wheat tortilla, brown rice, black beans, fajita mix, sweet potatoes, two salsa choices, cabbage, fresh cilantro, diced red onion, and lime. As the final ingredient, I alternate between the queso planta and handmade guacamole. It is the largest burrito I've experienced in Las Vegas! In case they are out of the jackfruit asada, I request guacamole as a substitute, which turns it into their Vegetarian Clasico Burrito (and lowers the price by $1).

That said, so many of the toppings have soy oil as an ingredient that it is practically unavoidable. The two plant-based toppings that I definitely avoid, because they are the highest in soy oil, is their cilantro pesto and balsamic vinaigrette. A similar eye-opener is the fact that nearly every topping has salt as an ingredient.
Melita's Table to the rescue with its fully plant-based menu and food cooked in a separate kitchen area. Unless ordering food together with nonveg friends or family, you're much better off ordering from the Melita's Table menu. Melita's Table has its own listing on HappyCow, so go check it out!

Cons: jackfruit is the only plant-based meat option, soy oil and salt are unavoidable ingredients, food is served warm rather than hot
