Boring but ok - Edit
This place has 1 vegan menu option:
Maki rolls with avocado and cucumber, it comes with soy sauce, "wasabi" and ginger.
Decent quick meal for cheap, 50kr for 8 rolls at the time of writing.
If you enjoy soy sauce, make sure you get enough if you get take-away food.
Pros: Vegan option, Fast outside rush hours, cheap
Cons: Only one vegan option, Need to ask for extra soy sauce every time
