Lunch blind tasting - Edit
We did the 3 course blind tasting with a starter, main and dessert. Our reservation was at 12:00 and we were seated in the back room, close to the kitchen. Decor is interesting and provides an intimate setting(dark). Our starter was Beet tartare with sweet beets topping, hazelnuts, pea shoots, mustard seeds and mustard leaf, with blueberry puree and garlic croutons. The main was Vegetable gyozas, carrots, broccolini, and bok choy on top of a rutabaga whip. Non vegan dishes were served with fish instead of gyoza. Dessert was a buckwheat ice cream, served over a cookie crumble with 80% cocoa nougat, peanuts and plantain chips. Everything was delicious and beautifully prepared. I asked for a single glass of wine suggestion to complement the meal and was very happy with the recommendation. Overall we enjoyed the meal and were satiated, not stuffed.

Vegan no garlic, no problem - Edit
One of us can‘t eat garlic, we just wrote it down when booking. We had the standard blind menu in 6 steps and it was great. The chef really knows what he‘s doing.

the concept of the restaurant was very interesting: we had to guess the ingredients in each plate.

We tried for the first time a pre dessert.
the only con was the smell inside the restaurant, its seems like mould, but after 10 minutes we didn't smell it anymore.

I loved that they offered a full vegan tasting menu, it was reasonably priced for the 6 courses at €55 plus €32 for paired wines. All of it was delicious and some unusual flavour combinations. The setting was very pretty and had a lovely ambiance.

All the dishes were delicious - a must in Nice.

Great Concept and Fantastic Experience - Edit
Went here for dinner with three friends. We did not have a reservation and were worried we'd not get a table, but luckily we did!
Read moreEverything was fancy and nice. The waiters wore nice clothes and were very professional. There interior design was very minimalistic and non-colorful. Along the walls were bookshelves filled with wine bottles. The music was instrumental uptempo but the volume was extreme low and could barely be heard.
The concept of this restaurant was something I'd never experienced before: a blind menu. They only said it was a six course meal and asked for allergens, apart from that we had no idea what we what we would be served. On top of that, the waiters did not present the dishes as they were served, which is the norm at fine dining restaurant. Here they did not say a word, instead they asked us what we thought it was after we'd finished the dish. Fun concept! It made us really try to focus on the dishes and discuss and guess what could be in it.
Now to the food.
The first dish was an exquisite green soup. It was sour and the texture was fantastic. 4.5/5.
The second dish was a creamy, enoki mushroom sauce. It tasted amazing and the texture was marvelous. Finger licking good! 4.5/5.
The third dish was vegetables and mushroom in a yummy sauce. 4/5.
The fourth dish was somewhat of a main meal. It was broccoli and tofu in a delicious brown sauce with chickpeas and cranberries (and made out of guinness and cranberry juice, the waiter informed us after the dish). 4.5/5
The fifth dish was the most disappointing one. It was the only dish that was completely different from the non-vegan dish. I got corn ice cream with crusts and cola sauce. My non-vegan friends got meat and cheese. I would've wanted some great vegan cheese. 3/5.
The sixth and final dish was another ice cream, surrounded by the best aquafaba meringue I've ever had. 4.5/5
All-in-all, the food was amazing and well worth the price. I also really enjoyed the concept, the service and the vibe. The biggest issues for me were the fifth dish and the fact that the entire experience took a really long time, about 2.5h. At least we were served bread throughout the meal, which was great to prevent us from getting hungry.
I'd definitely recommend eating at Nuances.

Great place for vegan fine dining - Edit
With the reservation and when arriving you are asked if you have any special dietary requirements. If you mention that you are vegan you get an amazing vegan menu. The vegan menu is quite different than the regular menu - the non-vegan items are not simply replaced, instead they make well thought out vegan dishes. The food was well-balanced and very tasty!
