Expensive unless you're starving - Edit
We planned to eat here but it costs HKG 245 tax each for the buffet. The set menu was 145ish but then the vegan main was pineapple on pizza. A few doors down the street was a Chinese style restaurant serving labelled vegan options including tofu and other veg dishes. 2 of us ate there and shared a beer tea for less than in nomads. Also I found all the animal skins in Nomads a bit offputting

Buffet with make your own pizza/noodles and salad bar - Edit
My omni-boyfriend used to love coming here as a kid, and so has taken me here a few times. It is a fun concept - buffet only, and you make your own pizza and noodles, with a salad/snack/dessert bar.
Read moreI like that I can customise my dish, and therefore don't generally need to communicate about whether the end dish will be vegan (although I always double check if the noodles contain egg).
The food tastes ok - it's kind of what you make of it.
Salad options are ok. Dessert options - fruit for vegans.
I like that I can get lots of veggies (and a wide range to choose from) to add to pizza or noodles.
The few sauces that are non-veggie are labelled as "non-vegetarian", so I steer clear of the Mongolian/Tom Yum/Green curry sauces. There are plenty of others to choose from.
I find it expensive for the dinner price, although lunch price is reasonable.
It can take a while for the dish to come to your table, depending on how busy they are.
Before ordering drinks, check the drinks deal for free flow alcohol.
Pros: Make your own concept, lots of veggies to choose from with pizza/noodles, better value for lunch
Cons: can get quite busy during weekends

Better than Ever - Edit
I used to live in Hong Kong and visited there after 20 years! While I lived there I often frequented this joint which was called Kublais and now Nomads. I was pleased to see that it was still the same with much improvement - now aside from creating your own stir-fries, there's an extensive buffet of salads, appetizers, soups, pizzas, soups and dessert! Lots of veggie options and the sauces are clearly marked for vegans/vegetarians. All the food was really delicious. We thoroughly enjoyed ourselves! I wish we had a Nomads in the US!
