Serves meat, vegan options available. Has vegetarian thali plates and momos (Nepali dumplings). Try the chai. Run by a Nepalese family. Although not strictly vego, this is one of the better options on the road to Aspen. Open Mon-Sun 11:00am-3:00pm, Mon-Sun 5:00pm-10:00pm.

Good service and accommodating to diet - Edit
My husband and I visited Glenwood Springa this weekend and stopped in. This place is run by a Nepali family, and the food shows. He got the Momos, a dumpling dish (non veg) and I asked for the Mushroom Mattar without cream. Everything was delicious and the woman serving us knew exactly which dishes could be made vegan immediately. The flavors were richly spiced without being overpowering. It's a good option in a city with limited vegan options.
Pros: Good service, Several filling vegan options (not just apps), Authentic flavors
Cons: A bit off the beaten path from the main town

OK in a pinch - Edit
OK food, if you like potatoes out of a can, but smaller portions. They are not REALLY used to vegans - I had to explain 'No ghee' several times. Worth eating here if you are stuck for options. I get the impression that the restaurant is struggling a little......
Pros: only option in this area
Cons: not really used to vegans, canned veggies used for the food
