Vegan at Frankfurt Airport - Edit
The store offers some ready vegan meals, like vegan sushi, falafel and hummus, several cutted fruits, muesli, as well as vegan, glutenfree and organic sweets, bars, etc. Prices are OK as well; a very good option, if you do not have much time before your flight.

Great stop when in a pinch - Edit
I had a two hour lay over and was pleasantly surprised by this option in the airport. They only have one staple vegan option that was decent for a boxed sandwich. However it is a very creative combination that certainly breaks up the monotonous veggie sandwich.

They have soy and oat milk for coffee!
