Good organic food - Edit
Informal and cozy restaurant with friendly staff that offers a fixed price buffet with vegetarian and vegan options along with meat and fish dishes. The food is all organic. The omnivores and the vegetarians seem to really like the vegan dishes here so if you are a vegan go there early otherwise you won't find much food for you.
Pros: Organic, All you can eat
Cons: Not enough vegan options, Food gets cold quickly

all organic food - Edit
Is always difficult to find because almost hidden at the basement of an office building in the outskirts of Verona. Address is Via de Besi but it is easier to reach from parallel Via Lucio III, turning at the church. It's my favourite place when I'm in the area, I like its informal atmosphere. Food is good, all fresh and organic. Buffet has lots of vegan dishes, from starters to desserts. Dishes are clearly labelled with different colours when vegan or vegetarian or neither. Open everyday at lunch and for dinner 12pm-2.30pm, 7-11pm (but don't come too late if you want to taste everything), closed on Tuesday evening.

All (vegan) you can eat - Edit
The restaurant belong to a organic shops network based in Verona but also spread all over north Italy.
The formula is "all you can eat", price is extremely moderate (from 15 to 20 euro), depending on hours or day. They serve vegan, vegetarian and meat/fish also. Quality is good, vegan desserts are not the best choice but vegan options are enough to fit all the needs. Furniture and lighting are not very stilish and, all in all, the restaurant is not fancy (and a little far from the city centre so should need a car) but it's worth a visit if you want to eat all the vegan food you can! (don't go too late if you want to try different dishes)
Pros: all you can eat, vegan, vegetarian, price moderate
Cons: far from the city centre, not fancy at all, late night food is poor
