Excellent Thai! - Edit
We had vegan soup, green curry tofu, and drunken noodles tofu. They were excellent! Other members of the family had the gyozo and ginger chicken and loved it as well.

They were able to whip me up a mixed vegetable dish. And it was delicious. I should also note that the hot sauce was outstanding and home made.

My wife and I originally wanted to check out Payo's - who has a clear "vegetarian" menu posted outside its cart, but it was closed for the day, so we gave it a shot. Low and behold, the young woman at the counter was very familiar with our request for vegetarian no egg, and explained they use a mushroom sauce in lieu of oyster sauce, while definitely holding the fish sauce – which was my concern when it comes to A) duh, not want to consume oyster sauce and B) the welcome, pleasant surprise of not eating noodles merely tossed with soy sauce (so very many times....). We ordered the pad kee mao, which had lots of fresh basil, a bunch of mixed fresh veggies (which is always excellent to see fresh, sliced, colorful veg in Alaska) and a good level of heat. The seating tables quickly filled up while we were there with other folks stopping on their way to or from Talkeetna, or on the highway. I enjoyed overhearing a nearby family also ordering vegetarian fried rice, no fish sauce, or....eggs!
Read morePlease note that I did inquire about the curry paste, because that's a whole other ball game, and unless a spot makes it from scratch or you can clearly see the containers it came in, I sit that one out.

Pros: understand "vegan", large portions - enough for two to share, has produce and tofu
Cons: outdoor only seating, uses styrafoam, moderate pricing
