Great place to enjoy typical Bilbao atmosphere - Edit
As far as Pintxo bodegas go, this is as classic as it gets. With the exception that there is quite the list of vegan options, beyond your typical mixed salad. I had the vegan fajita which was very oily but delicious!

Enjoyed this queer-friendly pintxos bar and the variety of veggie food like salads (seems to be a rarity in Spain!). The pintxos were original with seitan and a quinoa croquette and the service was very good.

I completely recommend the 'bokata lujuria vegana'. It's a bit spicy, but sooo tasty. Furthermore, the staff is so kind and they don't take long to prepare your order

Un sitio muy chulo. Cuando llegamos solo les quedaban dos pintxos: un rollito de seitán y una mini hamburguesa. Ambos ricos pero un tanto secos (llegamos a eso de las 16h y debían llevar tiempo en la barra). De carta, además pedimos las rabas de la huerta que son verduras en tempura. Estaban algo grasientas y las salsas eran lad agridulces comunes. Lo mejor del sitio es el propio sitio, que tiene un ambiente agradable. Los pintxos bien, que es de agradecer que tengan veganos, pero sin ser espectaculares.

Amazing bar with lots of vegan option - Edit
We found this place with this app and we noticed later that they have also the happy cow sign. They have so many vegan option. I like that they also had the typical aperitif snack in vegan version. I take from the menu the vegan fajitas very delicious and a small Bruschetta. My friend was happy too about the quality but she eat meat.

They have plenty of vegan options and they are delicious. The waitresses are friendly and the place is nice. Outside is usually full but you can find a spot inside easily. We tried a burger and a sandwich and also a pintxo to start.

Yo no soy vegana pero mi pareja si y en Bilbao es difícil encontrar un sitio donde hacer pintxos. Este es un sitio estupendo porque tiene muchas opciones tanto veganos como no. El ambiente es super guai, muy cómodo. Ya hemos repetido y repetiremos si volvemos a Bilbao.

Soooo many vegan options. Myself and my omni partner got the seitan fajitas and were blown away. Unbelievably flavorful, and just one of the many options on the menu.

Loved this place. As a non Spanish speaker beyond a few phrases, they were helpful and pointed out all(!) the vegetarian dishes. I loaded up on each dish with a different glass of red (an impressive list in itself) each time! What more do you want from your Spanish experience?! A definite must for any vegetarian visiting Bilbao.
