Like Chipotle But Better!

Same concept as Chipotle, but they don't charge extra for guac and have mango salsa! The tofu protein option is very tasty.

great option if you are looking for a tofu burrito

I'm glad to see that Mucho Gusto finally got listed in Happy Cow. Even though they serve meat, I have always felt that they at least treated vegans and vegetarians equally.
Everything is put together in front of you (think Chipotle but of higher quality and fresher tasting) so you know exactly whats going into your burrito, salad, tostada etc. For "protein" they offer Tofu in fire-roasted tomato and chipotle sauce, which I love. Their beans (both pinto and black) and rice are vegan, and you can add cabbage, lettuce, cilantro and/or jalapeños. They have several salsas to choose from and you can add their Sweet Chipotle Vinaingrette. Guacamole is a little extra charge.

Depending on how hungry you are, their salad is large enough to share.

There are two locations in Eugene, this is the one that I have been going to for years. My family (which are all either vegan or vegetarian) have made this our regular stop for years, have probably went there literally over a hundred times.

Definitely recommend if it's the type of food your looking for.
