Excellent Noodles - Edit
We ordered food to go as we arrived 20 minutes before closing (8pm, early) it was all yummy and came to about 120,000VND.
My boyfriend had the vego pizza and the pho, I had the Singapore noodles which were awesome and huge. Everything took about 10 minutes to prepare and was still very hot when we arrived home (5 minute walk)
Would have definitely gone back to eat in but we were leaving Nha Trang the next day.
Pros: Excellent Noodles, Cheap, Take away available

Small, inexpensive, good menu - Edit
For one of the small and cheap Vietnamese vegetarian restaurants it has a good varied menu. I had the rice with mixed veg and tofu, usually a tasty and cheap option, and I wasn't disappointed. Next day I returned for a rice clay pot, one of the more expensive items (still quite cheap) which wasn't quite as tasty. But try the La Hán Quả, a traditional Chinese herbal drink!
