Good coffee place with lunch option - Edit
This coffee place has a small menu, featuring various vegan treats which were honestly good. The only vegan savory option at the time was a salad, with homemade hummus and pesto, which made a nice lunch.

Really low key coffee shop with tranquil vibes to help you slow down. Delicious veg food such as smoothies, soups and baked goods. We buy our beans here regularly and grab a coffee & snack while we’re in!

An unexpected surprise - Edit
We were visiting Taos for four days in June, and were searching for vegan options when we stumbled on Mountain Monk Coffee. They are a coffee and juice bar with bakery and a small rotating food menu recently relocated to Taos from Durango Colorado. We ordered turmeric ginger juice, and vegan salad with homemade seed crackers and beet hummus. The owner was also kind enough to sell us a pound of ground coffee since we had run out of the home roast we had brought with us. The salads were delicious, as was the juice, and ambience inside the restaurant serene. There was also outdoor seating. The menu is mostly coffee, juices, and a wide variety of teas, with a few rotating bakery and food items. All are vegetarian at minimum, most are vegan.
