Salad options - Edit
The only vegan lunch options are salads (omit cheese), but you can add tofu and avocado. The staff is knowledgeable. They have kombucha, which is nice.

Tofu Scramble Is Awesome - Edit
One of the best tofu scrambles I’ve ever had. Another reviewer mentioned specifying the order with no cheese. But mine didn’t have any cheese so not sure what that’s about.

The much heralded tofu scramble is only available string breakfast: 5:30a-10:30a. Only post-Breakfast vegan items are a couple salads. More vegetarian options available.

Read moreThe Modern Market has a DELICIOUS tofu scramble! It has tofu, corn, onions, peppers and black beans. It is VERY flavorful. It came with a scoop of guacamole, delicious whole grain toast and home fried potatoes. For the first time ever, we boarded our plane having eaten a delicious vegan meal AT THE AIRPORT! Hooray for The Modern Market!

Definitely no scrambled tofu on the menu anymore. The only vegan options were soup and salad. The curry chickpea soup was tasty but the portion size was small and staff could not confirm if bread was vegan so I skipped this.

This little restaurant is located in the central food court part of concourse B next to McDonalds. The line situation was a little confusing, but service was friendly and fairly quick. The tofu scramble is a nice little breakfast and it is nice to find something that is actual food a vegan can eat. Would recommend. Plus, your receipt has nutrition facts for what you ordered! That's something I have never seen before.

The SW tofu scramble is awesome. Comes with potatoes and avocado. Nix the cheese to make it vegan. Anytime we fly through Denver I'm happy to see this place.
