Off-menu breakfast burrito - Edit
Ask for their tofu scramble, if it’s on the menu or not (it changes often), and ask them to make it a burrito. You end up with a sizable vegan breakfast burrito with potatoes, scramble, and avocado instead- way better than anything you’ll find elsewhere in the airport (DIA).

Surprisingly good airport food - Edit
As usual we didn‘t expect to find good vegan - let alone healthy - food at the airport. To our surprise the buddha bowl was not only tasty, but also quite filling and affordable. The sauce was sweet and spicy, the vegetables were crunchy and the tofu was fresh and not dry at all. You also get a good amount of tofu. All in all a very satisfying meal we didn‘t expect to find at the airport.

I’m so tired of not being able to find a satisfactory vegan breakfast at airports. It usually ends up being a smoothie, a puny piece of avocado toast, or sometime just a banana. Modern Market’s tofu scramble (w/o cheese) was a delicious and protein-packed surprise.

For breakfast the southwest tofu scramble is great, and I love that the tofu is organic. It's best to grab a Cholula hot sauce packet with your fork & napkins. This adds the perfect amount of tanginess & heat to the scramble. Then for lunch or dinner the buddha bowl is always a good choice. I like to add sweet potato to the bowl, or extra spicy roasted broccoli.

The map shows this in terminal B but we found it in terminal C. Not sure if they have more than one location or if they moved. They didn’t have that many vegan options but maybe you can modify some of the other things to be vegan. We were a bit worn out and didn’t feel like trying to negotiate so we went with the Buddha Bowl, the only fully vegan entree we saw. It was actually pretty good, though the slaw was a little on the sweet side and so was the mango peanut sauce. I would have preferred something more savory. Overall it was a good option for traveling through Denver.

Really solid airport option for vegans - Edit
Any vegan who's flown before knows the pain of trying to find food options in a time crunch, besides overpriced Chex Mix and Sprite. Fortunately, Modern Market has you covered. They're not fully vegan and their selection isn't huge, but the choices they do have are reasonably priced, nutritious, and surprisingly tasty. I recommend the Buddha Bowl if you want something filling and balanced. They're also easy to find, right next door to McDonald's in Concourse B.

The Buddha Bowl was so good! Lots of flavor!! The tofu was perfect and one of slices was extra grilled and extra flavored. Perfect portions and the right amount of sauce!! I’m very happy with my choice!! It was all vegan! And no wait!

Can’t get a better breakfast in the Airport! - Edit
The tofu scramble with bread and potatoes was as delicious as it could get for hot food at the airport. I would definitely eat here again in the future if I was super hungry before a flight. The only things I would say to look out for are: 1) the food is quite oily 2) ask for no cheese and no butter- they put a butter pack with the food and if you’re not careful it will melt! I also want to mention it was quick. Overall, a great choice for me and my long flight.

This vendor is located centrally in the B concourse food court. Staff move customers along quickly, answering questions about substitutions. The chicken curry salad was transformed into a Tofu Curry Salad. A lot of firm, thin-sliced tofu was included. The fiesta salad obtained also had a chicken-tofu switch with the cheese held.

Not much to choose from, but the cashier was helpful in putting together a vegan option. Had the everything avocado toast and substituted tofu for the salmon. It was delicious, but I had forgotten to have them remove the creme fraiche. At least they tried.

I ordered the southwest tofu scramble veganized with no cheese or butter. Confirmed with the cashier that the “red sauce” didn’t have dairy. It was 8 dollars and something cents, which I thought was a pretty good deal for Denver. It’s a big platter with a vat of smoky tofu with salsa, black beans, avocado and corn. Comes with home fries, toast and a slice of orange, which was a nice touch. Nice flavor but omg so much oil. A swamp of oil. It’s ok tho because I needed something to knock me out for the plane lol. My advice is so order with low oil. They seem nice enough that they’d accommodate. They have packets of cholula and bonne maman for your hot sauce/jam needs.

I got the super green salad without the feta and had them add tofu and avocado. If I would do it again I would ask for more quinoa for more protein, gains lol. OK tasting salad but when you are in a pinch and hungry you cant complain.

Not many vegan options, okay food - Edit
I went here based on the HappyCow reviews, around dinner time, and I think there was a different menu up than when the people were here who left most of the other reviews. I was looking for the Southwest Tofu Scramble but it wasn't on this menu (seems like that's just on the breakfast menu), so I asked the man at the register if they had any vegan food, and he told me they could do the Superfoods Salad with no cheese and also the Curry Soup, so I got a half order of the salad and also some of the soup (altogether it was $13-something).
Read moreWhen I was waiting for my order to be ready after paying, I was looking up at the menu and I saw another salad - I think Winter-Something Salad - that had a little "V" next to it, as if that could be ordered vegan as well, but the guy who worked there hadn't mentioned that this was another vegan option that they have and it was already too late for me to change my order. Over all the little "V's" on their menu are way too small in my opinion, they're really hard to see and I hope they realize that at some point and make them bigger. I'm only 25 and have great vision and unless I was right up at the counter ordering I wouldn't be able to see them very easily.
The half order of salad was a decent size, bigger than I thought, and the soup also came with a piece of bread, so I definitely had enough food. The salad was honestly pretty bland, but the ingredients seemed good, so I just powered through it. I think there was quinoa, kale, lettuce(s), slivered almonds, shredded carrot, and grapes in it, with some kind of dressing that wasn't quite enough to cover the whole salad.
The soup was good but too spicy for my liking. If you like spicy food, it shouldn't be a problem for you. The bread that came with it was nothing special, not very good but not bad either.
The cup container my salad dressing came in said it was made of plant materials, and the salad clam-shell container said it was made from recycled plastic bottles. They gave me the food in paper bags, and the soup container seemed to be paper based. The silverware they gave me seemed to be plastic as well as the clear over wrap it came in, but I'm not sure. There was also a disposable napkin included in the silverware pack.
