Never heard of cecina before, but will be making to when I get home! Also called ceci, it's basically a thick, chickpea-flour pancake. It can be put in a sandwich like any slab of protein.
Read moreMickey's serves non-vegan food, but makes it super easy and actually encourages customers to go for the vegan options, of which there are many. Being a tourist, I went for 'Patriota' which was ceci, tomato, vegan mozzarella and basil-pesto. Basically caprese with ceci in a gorgeous french-bread sandwich.
Paired with a herb and malt soda called spuma biondi, this turned out to be a delicious cultural experience. The staff were really friendly too.

Tasty cecina sandwiches with many vegan options - Edit
This sandwich place makes sandwiches with "cecina"s, which are savory chickpea cakes. The owner said that any sandwich that doesn't contain cheese is vegan. The sandwiches that we ate were really tasty, the bread was fresh and I liked it that it does not contain mockmeat but a traditional food that is vegan by default. In fact, it was the best sandwich I've eaten in Pisa so far. I especially recommend the sandwich called "Botanico". Seating is limited. Prices are alright.

Non conoscevo la cecina originale e sono contento di averla scoperta in questo locale!
Read moreLa scelta nel menu è agevolata poiché già privo di carne per scelta del proprietario e la maggior parte delle opzioni sono già vegane.
La cecina è buonissima e le porzioni sono abbondanti e appaganti.
La varietà degli ingredienti permette la personalizzazione del proprio panino/focaccia in ogni dettaglio ed è difficile uscire dal locale insoddisfatti.
Il proprietario, inoltre, è una persona piacevole con cui scambiare due chiacchiere.
Consigliato davvero a chiunque passi da Pisa.
