The vegan options are listed at the end of the menu in the “healthy” section. I got the flaco burrito and it was really good! No substitutions or modifications needed. My partner got the veggie fajitas (should ask w/o sour cream if vegan).

Another reviewer mentioned this food was flavorless but I was surprised to find it was rather tasty. Ordered the garden Fresca burrito without rice (thanks to another reviewer sharing it is cooked with chicken stock). It was surprisingly good!

Vegan here seemed to mean "on a diet" which I guess doesn't include many spices. Heads up, they use chicken stock in their rice. And I had to specifically ask if they used chicken stock in it. Otherwise I'm not sure they would've said it's not vegan.
Read moreWe got veggie enchiladas and the garden fresco burrito without rice. Other than being bland the food was okay, pretty fresh. We've spent too much time in Mexico eating spectacular vegan Mexican food to be excited about this. Because the options in town are minimal, it got an extra star.

The time we visited Ouray ( 3/22) most places were closed by 7. Mi Mexico is open later than most places in town. Cute interior with bright and colorful Mexican Art. Staff was really pleasant. It did take them 2 times to make sure my meal was vegan. So really specify what vegan is when you order!
