Very accommodating

We stayed at the hotel and enjoyed our dinner here after traveling all day. I was worried they did not have the vegan options described by others after looking at the menu. Our server brought the chef over and I shared that we were vegan and gluten free. He offered a few adjustments, but then asked if we could let him put together an appetizer and main course. They went above and beyond! The chef made a vegan ceviche (that was more like a citrus salad, but good!), grilled watermelon with roasted beets and a vinaigrette, and then a ratatouille. It was great. And there were some creative cocktails that I have not tried before.
