YOWAZA! - Edit
Maya (...and her sidekick Mo) saved my life at a music fest. Maya runs one of, if not THE best food truck on this planet!
Read moreShe was sold out of everything night #1, but she hooked me up with these rice-balls that were so heaven;y.
They told me to come back early day #2, I told Maya to pick 2 entries -- EMPHATICALLY she choose the jambalya and then the Po' Boy.
I could not believe I got jambalaya from this menu that was STACKED, but chef said it was the move....
IT WAS THE MOVE -- seriously each grain of rice had its own unique perfect texture and flavor, look at the picture and you will think "how could that be mind-blowingly good?" and my answer is....it just is that good!
The Po' Boy of course was perfection too -- such a good bite into the crispy shroomies and she picked the best bread of course!
10/10 love Maya !!

Tasty Vegan Cajun - Edit
I stopped by the Downtown PHX Farmer's Market just to try her food.

These were very good. A nice crispy coating and tasty inside. Made with hearts of palm. The accompanying remoulade sauce was excellent with a lil spicy kick. Loved it.
SMOKIN JACKFRUIT PO'BOY $15 -
A large sandwich that could be split between two people (especially if you're wanting to sample/try other dishes). The BBQ sauce was yummy and I loved the crispy onion strings (I'd get them in everything if I could). The jackfruit itself was fine. I've had better, I've had worse.
SHRIMP N GRITS $11 -
Large portion. Very tasty and she's not skimpy with the shrimp.
PEACH COBBLER $12 -
This is the only item that I just straight up disliked. It wasn't good (measuring by southern standards), and it def wasn't worth 12 US bucks. If you're from the south and looking for an amazing and authentic peach cobbler in PHX, go to Nana's Soulfood Kitchen in Chandler.
Overall, I'd return to try other items.

Soul food - Edit
Maya’s is amazing. I’ve had the opportunity to try them at a couple of different markets and I’ve never been disappointed. They blend flavors perfectly and a great example of that is their creole cakes, the perfect amount of spice! Definitely check them out if you want some amazing soul food.

Unique and delicious - Edit
Nice to find vegan cajun food in the valley. This place doesn't disappoint. I have had the gumbo and the creole cakes both were great! Staff is very friendly as well.
