Kitchen can alter menus to serve vegetarians and vegans by substituting dashi fish stock for kombu stock, replacing fish kamaboko with sesame tofu, strips of konyaku taro root instead of sashimi fish, and have other dishes including vegetable tempura, salad, and a tofu steak which is cooked at the table.
