Vegetarian restaurant in the food court of Centro Comercial Monterrey which is located next to the Poblado Metro station. Has many vegan options. You choose what you want, pay, and take any available table. A walkway from the station directly to the shopping center is convenient. Open Mon-Sat 10:00am-7:00pm.

Good food at a good price - Edit
This place is located in the upstairs food court in the shopping center called Centro Comercial Monterrey. It's located next to the Poblado metro station. I went in January 2016 and the meal of the day was 8500 pesos. Grab a tray and silverware over to the right and point to what you want. You choose either "oriental rice" or "oriental spaghetti", three side dishes, one of 2 salads, and then pick up a bowl of soup and choose a drink type and then pay. There's a list of drinks available in front of the cash register. The day I went, I chose the oriental spaghetti, black eyes peas, a slice of "meatloaf", mixed veggies and the cucumber salad. The soup was plantain soup and I got the jamaica drink since it didn't have sugar added. I thought the food was pretty good, especially for the price and the neighborhood. The mall is filled with electronics stores. Recommended to anyone who is in the area.
Pros: Flavors good, Price, Location
Cons: Noisy food court location

Scratch your greasy Chinese itch - Edit
Although Medellín has a bunch of great Western and Colombian-style veg restaurants, there´s definitely a lack of good Asian food - which is where Mati Comida Saludable comes in. For 8,000 COP, enjoy a huge plate of greasy Chinese: stir-fried noodles, fried rice, fried dumplings, faux meat stir-fries, and yummy juices. Best thing on the menu? Peanut milk - tastes like an awesome milkshake.
Pros: Yummy, Chinese food!!
Cons: Food court ambience

A hidden gem - Edit
It was hard to find Mati, it is a bit tucked away in the food court. I am so glad I found it though! I had one plate of the day, which turned out to be a three course meal with a drink included! I was stuffed full of amazing food from this bountiful buffet for 7,000 pesos. I could have easily shared this platter with a second person. Well worth finding it!! Hint: it's on the first floor! go up the stair case that's next to one of the main entrances, the one with huge two-story windows.
Pros: inexpensive, filling, healthy
Cons: it's in a shopping mall, a bit hard to find
