Plenty of quality vegan sushi, noodles & ramen

This is a nicely kept restaurant with a full bar in a good location within Apple Valley’s commercial area.

I could write an epic poem about the Veggie Power Classic Roll (vegan), which was an incredibly complex fusion of 15 ingredients that created a near emotional dining experience I didn’t want to end. It was hands down the best vegan sushi roll I’ve had to date. I’ll update this review if I find something better.

A long and enjoyable conversation with two servers produced this list of all vegan menu items that appear on the main menu or separate vegetarian & vegan menu:

SUSHI ROLLS
Kappa
Abokado
Oshinko
Vegetable Maki
Veggie caterpillar roll
Veggie grasshopper
Veggie Power (on main menu but is vegan)

RAMEN
Roasted vegetable (on main menu; order with no egg to make it vegan)

NOODLES & RICE
Kinoko soba
Tempura soba
Kitsune Udon
Tofu Yakisoba

SMALL PLATES
Seaweed salad
Tsukemono
Spring salad
Cucumber salad
Steamed edamame
Vegetable spring rolls
Vegetable tempura
Sesame green beans

The soy sauce served in the pouring jar is Kikkoman brand, and therefore vegan.
