Fabulously good eats - Edit
Serves meat and dairy, very helpful, excellent for groups with omni-eaters because there is something for everyone. This is my for-sure favorite Indian food in the area. The menu shows what is vegan and if you arrive at lunch, the chef can come out and walk you through the buffet's vegan options. Ask for the rice and naan to be vegan, and they will happily oblige. Favorites include Aloo Gobi, best I have ever tasted, Saag with tofu, smoky and delicious. On the buffet, the chutneys are excellent, as well as the daily vegetable soup.

Never a Bad Experience - Edit
The thing I love about this place is they denote on their menu that items can be made vegan. The food is always great and I've never left without a full stomach!
Pros: Great food, vegan menu

Very Good Food, Noisy Dining Room - Edit
This is one of my favorite places for vegetarian dining in Princeton. I've tried many dishes on the menu and have never had a bad experience. Be sure to let the kitchen know whether you want your food mild, medium, "American spicy" or "Indian spicy". They will make it to order for your taste.
Pros: Food, Value, Location
Cons: Noisy, Service is Slow

Best Indian in Princeton - Edit
There is a plethora of Indian restaurants in the Princeton area but Masala Grill is the only place I consistently come back to. The vegetarian options are what you would expect, all the staples can be ordered at various heat levels and if requested can be made vegan. Their paratha is great (ask for no butter) and the saag is a favorite. It's also a cozy although sometimes crowded BYOB. Overall the prices are a high for basic veggies and there's better Indian further away but this is the best you can find in Princeton.
Pros: vegan options, whole wheat breads, byob
Cons: price, menu doesn't change, can be heavy / unhealthy
