Pretty Good Vegan and Vegetarian Mexican Food - Edit
Started with chips and a variety of salsas- all of which were good. We had 2 spinach enchiladas (**** $15.00) with a very small amount of sour cream and cheese. These were served with tasty, refried beans and rice. We also tried the Tacos De Veggies (**** $16.75) - corn tortillas filled with veggies and cilantro

fresh avocado slices and Pico. Iced tea was above average. The service, from being seated, to the wait staff was excellent. I like the atmosphere as well- with it's section for sports and another slightly separate area for dining. This was our second time at Maria Cuca's, and we enjoy going there when in the area.
Pros: Complimentary chips and salsa are good, Both our dishes were both polished off. , Service is excellent.
Cons: I hope all the sides were vegan or at vegetarian. , Of course a few more vegan options would be nice.

They have a veggie taco option, just order without cilantro sauce and say no cheese. They were delicious with the pico de gallo that had pineapples
