Dwindling vegan options

Landemaine is quite disappointing. Rodolphe Landemaine, the founder (baker) is vegan and launched Land & Monkeys which is amazing. But his main Landemaine bakeries have very few vegan options and they're also disappearing! They used to have multiple pastries, at least a cake and a tart but now it's usually just a vegan croissant...
I just find it weird to say you're vegan but actively profit from non-vegan businesses... And as they've shown with Land & Monkeys, all of this can be vegan and delicious, and people sometimes don't even know it's vegan!
