Surprisingly Delicious! - Edit
This is the only veg restaurant listed on the Happy Cow app in downtown Lincoln, and I'm so glad I stopped! The baked tofu wrap was so delicious! It was nice and warm, tofu well seasoned, and lots of fresh veggies inside! Just what I needed on my cross-country trip. I also got a couple muffins for the road, and they look really tasty! I was so happy to see so many vegan options, and most of what wasn't already made vegan could be customized!
Pros: easy to find, lots of vegan options, delicious food
Cons: only open til 3pm so have to get in early

Greatest food in Lincoln - Edit
So far, the greatest meal I have had while traveling the US. We went for the soup of the day and a wrap. Both were great, the tofu in the wrap was the best seasoned tofu I have ever tried. Visit this place if possible at all!
Pros: fresh organic food, amazing tofu
Cons: a little expensive

Unsuspected find in Lincoln! - Edit
Didn't expect to find good vegetarian, organic food in Nebraska, but here it is! Had the black bean burrito, and it was delicious; I don't know what they put in it, but it was the best burrito I've had in a long time. Don't miss this place.

A favorite stop - Edit
I work in the performing arts in Lincoln, and some of our guests that travel through are always so grateful to have a vegetarian restaurant close to their hotels in downtown! It's located in the Historic Haymarket, and has a farm to table centric philosophy. The food is always fresh, the baked goods always vegan, and the staff always friendly. If you visit Lincoln, stop in and grab a muffin to scarf down as you work your way through the huge Saturday morning Farmer's Market. Then come back to have a delicious meal for lunch! Look for Maggie's baked goods at other Lincoln shops, such as Cultiva Coffee and The Mill (both locations).
Pros: Farm to Table centric, Huge Muffins, Easily vegan
Cons: upcharge for vegan cheese

Great Lunches Served Here! - Edit
Delicious and healthy soups, salad options, wraps and more for vegetarians with many vegan options. Maggie's supports local farmers and businesses. The food is fresh and the soup and salad menu varies. There is a small eating area(seats 16) with photos of the local farmers on the wall. I wish it was larger but there is some outdoor seating, weather permitting. Take out is a popular option and the service is always friendly.
Pros: Fresh local food, Many vegan choices
Cons: Small seating area

Maggies is great. We make a trip down there almost every weekend. The baked tofu wrap is fantastic. Hours are limited to morning and lunch, so dinner is out of the question, but well worth making a trip. Make sure to bring your check book, no cards excepted.
Pros: Friendly, Reasonably Priced, Nice atmosphere
Cons: Do not except Credit Cards, Limted Hours Of Operation

I was so pleased to find Maggie's as there aren't many options when you're traveling North. Great wraps and good portions too!

Healthy Eating in Lincoln - Edit
Maggie's is a great little cafe in the Haymarket. I especially liked the salads and Banana Berry smoothie. They have several veggie wraps (three are vegan), a few warm main dishes like lasagna and pizza, and a new soup everyday. They also have an array of rich and delicious muffins and scones.
Pros: healthy options, close to downtown
