Madre Terra
A small, home-style Ecuadorian vegetarian restaurant serving daily set lunch menus. Two small dining rooms upstairs in an old building. The entrance is easy to miss, so look for the small sign hanging perpendicular to an open doorway on Luis Cordero, a few doors west of Mariscal Foch crossing. Specify if you are vegan as sometimes uses dairy. Call for hours - tell us.

Inexpensive, homestyle Ecuadorian cooking - Edit
I chanced upon Madre Terra while on my way back from Quinua. It's worth a visit if just to experience some authentic local flavor and atmosphere.
Very inexpensive set lunch menus (around $3).
I asked if everything was vegan and was told it was, and indeed it was on the day of my visit. I can't be sure if that's true every day, so vegans please ask and let HappyCow know.
It's apparently only open for lunch, around 12:30 to 3:30, give or take.
