Nice place

It always has something vegetarian and vegan
It is good value and if you don't have much time is the best place to go. If you do it's nice too.
Been there many time and intend to keep going.

Quite a few vegan options

In general, there are many vegetarian options both days, and quite a few vegan ones. I will list what I found so far:
Thursday: The most popular booth is the Falafel vendor. They also sell salads. Go early to beat the long queues. The Falafel costs GBP 4. If you like it spicy, try their peanut chili sauce. There is a popular salad box as a gluten free option.
In the same row there is a Lebanese vendor selling a warmed up traditional pastry stuffed with aubergines and other veggies. There is also a fruit and vegetable stall and a baker.
Friday: there is another falafel vendor, not as popular as the Thursday one, but still good.
There is a Venezuelan vendor who has a gluten free corn patty filled with beans, plaintain and avocado sauce. Vegans, ask to hold the cheese. This vendor has lots of meat dishes though.
There is a Mexican vendor who sells burritos and other veganizable items.
There is an almost vegan stall, Rainforest Creations (https://www.happycow.net/reviews/rainforest-creations-east-london-18098), that sells salads, rotis, lentil burgers and sweets.
There are vendors selling Pad Thai, a Vietnamese food seller which has vegan options. Also, there is a Caribbean stall selling a vegan meal with beans and plaintain.
Unfortunately, there is a lot of meat served at this market.

Cons: Lots of meat dishes, Not many places nearby to sit down, Can get a bit crowded
