Excellent Food - Edit
Checked Happy Cow for places to eat in Innsbruck. Very busy weekend, all purely vegan places were closed or booked. Ventured in to learn they were also fully booked. However, since it was extremely early by European standards, the manager graciously offered a table with the understanding we be done by 8pm. We both had the vegan burger, unusual and delicious: a layer of hummus with grilled mushrooms and all the burger fixings, a large salad and great fries.
All very filling and the service was excellent. Would do it again if we ever return to Innsbruck.

Friendly staff, modern and stylish place but most important, great food! Gotta get a side with your burger as it doesn't come with anything. Home made ketchup is delicious! Was surprised to also see a vegan desert on the menu :)

Veg options - Edit
We had the vegan burger and vegan salad. Both were tasty - the salad didn't have any protein but was otherwise a very good vegan salad (by Austrian restaurant standards). The burger was whole mushrooms and hummus and did not contain a patty. Some of the sides, like sweet potato fries, are vegan if ordered without the dipping sauces. The restaurant reeked of meat burgers but otherwise had a nice atmosphere.
