Only fully vegan spot in Boulder

Parking in strip mall, easy
Only a few patrons on a Sunday afternoon. Nice interior with patio seating, but a bit too cool today for that.
Rice paper summer rolls, peanut sauce. Different meatball filling instead of a shrimp alternative. Lacked color in presentation and peanut sauce was more watery than I prefer
Pho lunch size vegan steak. Pretty decent portion. I enjoyed this dish and would order again. Mock meat has a decent texture and flavor. Not sure how it does from the"beef". Pretty flavorful without added heat.
Ice Vietnamese coffee light sweet
Good friendly service

Pros: Alternatives with specials, Easy parking

Great Find

While drying through Boulder I stopped here after seeing it on Happy Cow. I had the lemongrass tofu with rice and a spring roll. They were delicious. They also have allot of boba flavor options!

Stepping into their own

We were so impressed by this restaurant! It’s not always easy to find vegan restaurants that truly balance comfort food, freshness, and flavor, but they are really hitting their stride. Everything we ordered was vibrant, satisfying, and full of flavor.

They also offer several creative veggie meat options if you enjoy exploring plant-based alternatives, while still having plenty of tofu and vegetable-forward dishes for those who prefer whole-food style meals. The staff was warm and knowledgeable, the patio was perfect on a beautiful Boulder day, and we left full without spending a fortune. Such a great addition to the vegan food scene!

Lotus Moon Vegan Pho

We unfortunately did not enjoy our food at LMVP. The noodles were overcooked and the flavors were bland. What’s most disappointing is I asked to swap the mushrooms for something else and I was not informed about the $3 up charge…they also barely put any of the swapped ingredient in the dish, so that made things a bit frustrating. I felt very let down, as I prefer to support fully vegan restaurants.

Lots of options

Pretty solid food at a reasonable price. The Banh Mi was definitely the standout though. Also loved all of the drink options!

Lovely!

The pho was fantastic, but my favourite part was being able to have iced Vietnamese coffee again! The gluten free brownie was really delicious, too.

Vegan Pho for Fabulous

Great food and service! It was easy, delicious, fast, and pretty good sized portions. I loved everything I tried which was the summer roll, the Banh Mi sandwich and the Lemongrass Tofu Pho. The brownie was great too as well as the Fruit Smoothie! I added my favorite spices to the Pho which made it phenomenal! Love the fresh veggies and noodles in the Pho. The sauce on the Banh Mi was so good! This will be my go-to place whenever I'm in Boulder. Can't wait to go back and try more items! BTW, I never write reviews but I had to for this place, just loved it!

Pros: The summer roll dipping sauce was thick & superb!, The roll for the Banh Mi was flaky on the outside!, Love the brownie-just right!

Nice stop but bland

A nice find in Boulder. Haven’t had pho in many years. It was okay. Had the spring rolls also. Didn’t like the fake meat. Flavors were a bit bland. Tofu was good.

I Love This Place!

Tasty food in a really pleasant setting with plenty of windows and soft lighting in the evening.

The waitstaff is friendly and efficient and it’s in a convenient central Boulder location with plenty of parking. The Bolt, Flex, Hop, Bound and 205 bus routes are all nearby.

The food is light and flavorful without being salty or oily. My picky non-vegan friends even like it.

Available proteins for most dishes include seasoned, steamed or fried tofu, a variety of mock meats, and vegan shrimp.

My go tos are the rice paper summer rolls (not fried) with "meatballs", the vermicelli bowl with "chicken", and the banh mi sandwich with "ham". Other dishes I’ve tried including pho were also excellent. Sometimes I order the delicious boba smoothies, brownie, or mango rice dessert.

I'm glad to be able to support a locally-owned small business with delicious, all-vegan food!

Very disappointing. The sauces are watery and flavorless (they just taste wet), the space is meh, and the food is mediocre at best. Do yourself a favor and visit literally any other Vietnamese restaurant and order a tofu-based dish and you'll have a much better meal.

Cons: Bland, Watery sauces, Cold when people come in and out

Dear Scott,

Thank you for taking the time to share your feedback. As a local, 100% vegan business, we're truly sorry to hear that your experience fell short, especially regarding the sauces and summer rolls.

We'd like to clarify that the protein in the summer roll is our house-made vegan version of 'nem nuong,' a traditional Vietnamese summer roll filling that translates to 'meatball.' We love them the way they are, but your two star review (the worst you can give on HappyCow for a vegan restaurant) shows they weren't for you. Even though we try our very best day in and day out, you can't please everyone!

We are also very disappointed to hear your sauces were watery. This is not our standard, and we are addressing it with our kitchen team. In the future, please feel free to let your server know immediately—we would have insisted on replacing them with a fresh, properly-made batch for you. We ask our customers that "if something is wrong, let us know. If something is right, let everyone know." Of course not everyone lives by that - in fact, many do the opposite - but as vegans that is a common courtesy to consider in the future if you want to see vegan restaurants in this world.

As for the draft, we sincerely apologize for the discomfort. While we have limited control over that back door area, our staff is always more than happy to reseat you at a more comfortable table. Please just let us know.

We are passionate about providing a high-quality vegan experience, and feedback like yours is crucial for us to improve. We hope you'll consider giving us another chance to provide you with the flavorful meal we're known for.

Sincerely,

Lotus Moon

Toooooooo watery!

The sauces were mostly water and flavorless.
The summer rolls tasted like a burger because they put meatballs in them. Not good.
The chicken dish was good, but only came with a couple bites of vegetables and a mound of rice.
Flavorless sauces. 99% water.

Pros: Chicken

Cons: Drafty near the back door., Sauces are colored water.

A hidden gem for plant-based pho lovers!

Lotus Moon Vegan Pho delivers a deeply satisfying, flavorful experience that rivals any traditional pho — but entirely plant-based. The broth is rich, aromatic, and perfectly balanced, with layers of umami that suggest hours of slow simmering. The rice noodles are always fresh and cooked just right, and the selection of toppings — from tofu to mushrooms to fresh herbs — is generous and vibrant.

The atmosphere is calm and welcoming, and the staff are incredibly kind and attentive. Whether you’re vegan, vegetarian, or just looking for a nourishing, soul-warming meal, this place is a must-visit. It’s rare to find vegan pho done so thoughtfully — Lotus Moon has truly perfected it.

Highly recommended for anyone seeking comfort, quality, and a bowl full of heart.

Pros: Chicken drums, Wraps, Lemongrass tofu

Cons: The place is a little too cold from AC.

Wonderful place

What a wonderful place! The atmosphere is calm and inviting, staff are extremely friendly, service was lightning fast, and (most importantly), the food was beautiful, creative, and delicious. You absolutely don’t have to be Plant-Based to love the food here. The “chicken” drumsticks were crispy and warm, the Lemongrass tofu savory, and the Hainan “chicken” had an amazing texture and crispy “skin.” Can’t wait to come back and try new dishes.

Pros: Lovely calm atmosphere , Tasty, beautiful food, Great service

Only vegan place in Boulder AFAICT (June’25)

Banh mi with vegan pate was good. Multiple vegan protein options. Nice to find after a day of climbing. Boba available too. Empty when we went (2pm, Sunday).

Pros: Banh mi , Protein options, Daughter liked the vegan calamari

Cons: Hard to find the right turn in street, Thai iced tea too weak

Delicious with many Mock Meat choices

I got the pho for dinner and chose vegan steak bits to go in it, which was delicious. It comes out not spicy, but can add in the chili sauce on the table.
I got the banh mi and summer roll to go, which was excellent with the vegan mayo and mock ham

Pros: Many mock meat options

Delicious Vietnamese food

Loved having lunch at Lotus Moon! I had the vermicelli bowl with vegan chicken as the protein and it was delicious! All the ingredients tasted fresh and the sauce on the side was a nice addition. It came with two spring rolls which were sooo good! I could eat a whole portion of them. For dessert, I had the brownie which honestly exceeded my expectations. It was sweet but not overly sweet, and the ice cream on top was definitely a perfect match. Mochi balls added some color and fun to it!

Much needed addition to Boulder

SO excited to have a fully vegan option here! Ordered the crispy spring rolls, bahn mi with “ham”, pho with “chicken” and “steak,” thai tea, a Vietnamese iced coffee, and mango sticky rice. Went with a non-vegan friend and he said the “steak” tastes a lot like fatty pork belly. Mango sticky rice was slightly warm which I have never experienced before. Total came to just under $70

Pros: All vegan, Friendly staff, Fresh food

Great Vegan Protein Options!

The Thai tea and Vietnamese iced coffee were delicious (and unsweetened!). The ham in the bahn mi, steak in the pho, and chicken drumsticks were my favorites. My vegetarian friend (who arrived a bit later than us) took a bite of a drumstick and was afraid it was real chicken! She really enjoyed her chicken curry. My omnivore partner liked the calamari and was also a fan of the steak in the pho as well as the pho broth. We got shrimp in the pho. While it was a little off for me texture-wise, my partner who loves shrimp said that the texture was similar to the real thing. Overall a great experience with lots of protein choices!
