Genuine vegan food in Cervinia - Edit
This is the only place I have seen yet after extensive looking that offers and marks vegan dishes clearly. Good chunky, warming and filling soup with beans, cavolo nero, carrots and dozen of other veg.

Slightly anxious moment when a waiter offered pannacotta. I was astonished so asked if it was vegan - turns out no gelatine used so vegetarian but not vegan. A small step in the right direction but a long way from the innovation I am looking for, and slightly worried the waiter doesn’t know what vegan means but that is not uncommon.
Revisited 1/2: even better, lentil strudel is really tasty, a proper main course, with a sweet red wine reduction sauce. And they have a dessert! Tarte tartin. Have to have without the dairy gelato but it’s tasty and very unusual to have a dessert option in Cervinia.

Decent dinner - Edit
In Cervinia it's very hard to find vegan options that have a decent protein source. This place was the only one I found to have clearly labelled vegan and vegetarian options on the menu. I had the lentil strudel which was really delicious. The staff are very friendly too.
