A decent selection of vegan options! - Edit
There was a wrap, overnight oats, bircher muesli and oat matcha latte that were vegan (marked with VE). There were also a good number of vegetarian options (marked with V) including pastries and a salad.

When you get out of security in Terminal 1 past all the duty-free stuff, go to the left to find this place. They have vegan wraps, salads, overnight oats, and a vegan croissant. They didn’t have the vegan chocolate shake when I was there.

It’s a woeful selection of shops with vegan options in Lisbon Airport T1 but Soho has several and they’re all clearly marked. It’s not where the food court is, however. You need to turn left when leaving Duty Free. Alternatively, head to Gate 16A and it’s just beyond and to the left.

Don't charge extra for plant-based milk - Edit
Next I'm feeling like having a latte or similar in the airport I am definitely coming here again. Prices are the normal ones for an airport. Contrary to Starbucks, here they don't charge extra if you prefer your beverage with plant -based milk. I would like for them to have more food options.
