Terrific vegan enchiladas

This place was a gem to find on the road between LA and Portland. The vegan menu is fairly extensive. Instead of focusing on fake meats/cheeses, Lilly’s uses the old stalwart TVP and nut-based creams to create delicious Mexican entrees. I had TVP enchiladas with red sauce. Not only were the enchiladas delicious, but the rice and refried beans, gently drizzled with light crema were actually the star of the show. Worth the stop! Take note, their food is not spicy hot, but can be made so with their hot sauces. If they broke off and served their vegan menu from a separate location, it would be 5 stars

An Oasis In Our Vegan Desert

That they even HAVE a vegan menu is wonderful

Pros: Soft vegan tacos with TVP, The enchilada very tasty ( could use some veggies , Tamales .. yummm
