I didn’t look at the menu, but they did have two types of vegan croissants available in the bakery case. I got the almond flavor - pretty good!

Excellent turmeric latte - Edit
I know Le Pain Quotidien from Spain. At this airport location vegan options are limited, at least the day I landed. The cookie was rather a crispy sugary something that I wouldn’t order again. The turmeric latte however was great and the staff very kind.

They had a small sign on the counter saying "pan 100% vegano".

The avocado toast was excellent and seemingly had an entire avocado on it, in addition to hummus, seeds and other tasty things -- very filling!

I went to two outlets, both were clear that none of the food was vegan. The menu did not have the items listed on Happy Cow. The only substantial vegan meal I could find past security at terminal 1 was one of those barren salad Subway sandwiches
