... have a traditional cassoulet! Cassoulet is a hearty French dish from Languedoc, said to have originated during a 14th-century siege in Castelnaudary, with Toulouse and Carcassonne both claiming the authentic recipe.

Disappointing experience – not recommended for vegans - Edit
In my years of being vegan, I’ve rarely had such a bad meal. The fries were limp and flavorless. Although the menu clearly marked vegan and gluten-free options, the staff refused to adapt any dish to meet both needs. The only thing they offered was a plate of raw vegetables with ketchup (!). Some of the tomatoes were mushy, and the cauliflower was gray on the inside – as if it had been sitting around for days.

Found this restaurant open on a Monday; welcoming and with a choice of vegan dishes (at least one in every category). The stuffed courgette and the vegan cassoulet were great; for desserts, both the sorbet and the crumble were very acceptable!

They have several vegan options and they are good. It is a bit pricey. The Cassoulet offer they have with wine and salad does not include the vegan option, which is not fair. The place is nice but there are lots of photos of bullfighters (I don't know what it has to do with the theme of the place) and it is a bit cold. We paid almost 40€ for a burger, a cassoulet and a glass of wine.

I have never been to Carcassonne, France and so I checked out available options and found this gem. The menu was clearly marked with vegan options, the service was absolutely phenomenal, and the food was beyond words. I went for dinner and it was so good. I went for lunch the next day to try something else. Both were spectacular.

Fantastic food. Seriously well cooked cassoulet and a crumble so delicately cooked, it went so beyond being called merely a crumble. Lovely presentation, reasonable wine.

Such a shame, because we were happy to find good food in a town renowned for catering mostly for carnivores. Maybe it's because they add service to the bill that they just don't bother.

The waitress was very helpful and spoke good English. The vegan dishes were clearly labelled on the menu. I had the vegan cassoulet and found it very enjoyable. There were two vegan starters but unfortunately one of them was unavailable.

A Lovely Atmosphere - Edit
This was a perhaps surprisingly enjoyable experience. The staff were really welcoming, the ambience- seated in a bustling outdoor thoroughfare - so southern French and finally, the Vegan fare was delicious. The tomato entree was vibrant and very tasty, while my partner's stuffed courgette was surprising. Good stuff!

This restaurant offers a vegan set menu alongside a meat menu. We both had the vegan set menu and were very impressed. For the main course, we selected a traditional local dish, the cassoulet, adapted for vegans. So nice to experience.

Unfortunately, we didn't manage to make a reservation to have lunch here (it was full when we called) but we came here for a mis afternoon snack/dessert. They spoke some English but even in French we managed to explain that we were vegans and they were super helpful about it, even checking the ingredients on the ice cream for us. We had the apple crumble which we loved. Unfortunately, they don't have vegetable milks for the coffee, as the owner explained they were focusing on vegan meals but not so much on drinks.

This seems like the best way to eat a wholly vegan meal in Carcassone and it was run by the friendliest family.

Veganized classics in Carcassonne - Edit
We had the onion soup, the cassoulet, the parmentier (shepherd's pie), pineapple carpaccio and the apple crumble pie. Of these, we would highly suggest the soup, the parmentier and the carpaccio - these were really tasty and there was thought put into the dishes. We also tried the blanquette de Limoux, the original sparkling wine, and the house lemonade - both were lovely. Would recommend this place to anyone looking for vegan versions of the French classics in Carcassonne.

A lovely restaurant with friendly staff. A dedicated vegan menu where, during the day, you can get 3 courses for €19.50. Food is home made, simple, fresh and well presented and staff are friendly and helpful. We came here twice as to get vegan food in Carcassonne is as rare as hen’s teeth.
