Quality Veg Mex! - Edit
I was really really impressed with Laredo. I came here for dcvfa‘s restaurant week and was impressed that they had a full vegan menu. The thing that stood out the most was how flavorful the dishes were. We had a very creative stuffed zucchini yet some delicious Portabella fajitas. It’s really nice when dishes are clearly designed with input from vegans. The stuffed zucchini had wonderfully seasoned marinated tofu cubes in it that added protein to go with all of those delicious vegetables. To make things even better, our server Juan was like the nicest person ever and so friendly. He definitely made the whole experience even more upbeat. I will definitely recommend Laredo and look forward to going back!

This was my second time here and I was pretty disappointed after a magnificent first time. Don't get me wrong, the food was really flavorful, but there were several of hiccups along the way.
We started with the vegan tamales. Laredo is an early adopter in using non-dairy cheese in Mexican food, and sure enough the tamales had mozzarella melted into a red sauce on top, which was wonderful. However the filling seemed like it was the frozen veggie medley, so it was wasn't very hearty or substantive; each bite was a mix of just corn meal and peas/carrots/green beans. I wouldn't order again.
For the entree we shared a Hawaiian fajita platter. Now the fajitas here are a must order if you are getting vegan food. They bring them out on the hot and sizzling cast iron platter, Laredo chefs know how to season the tofu and veggies to make them really flavorful, and it comes with the works: rice, beans, cheese, guac, pico. The problem was it came with three small tortillas. Given the heaping mounds of delicious fajita filling (stuffed in a pineapple half) and accoutrements, three tortillas was enough for about half of the meal. This felt super stingy and how obviously not conducive to sharing the large dish. When I asked for more tortillas, they promptly brought them out but had the gall to charge extra. Sigh.
This was a three star experience, but given that I've been here before and it was fantastic, it averages out to four stars for me. I was bummed the server was indifferent when we told them they got the order wrong ("I'll look into that" and then never came back). But last time our server Juan absolutely killed; friendly, helpful, funny. It was cool sitting in the Frida room in back, and I like that they have outdoor seating. Very grateful

It’s so rare to find vegan options at Mexican restaurants and Laredo has an actual printed vegan menu. Also I’ve never seen a Mexican restaurant with tofu. The food was delicious too! Will definitely go back.

Laredo has a vegan menu with several options and the ability to customize. I had the quesadilla with mushrooms and really enjoyed it. With a frozen drink of course.

They're doing their own take on things which is nice, and they have a separate vegan menu. The quesadillas have a creamy texture that I liked. Note that their online ordering didn't reflect the actual menu so you may want to call.

Whole separate vegan menu! - Edit
God I love this place. They have a separate vegan menu with tamales, nachos, fajitas, burritos, etc. The portobello fajitas are *chefs kiss* and the fake cheese they use isn't bad, either. Only complaint from me is that its too far away from where I live!

I’m so happy that Laredo has added a vegan menu. Everything I’ve had from it so far was very good, and I appreciate their generous usage of melted vegan cheese. I’ve always liked this place... they are generous with the chips and salsa, have great service, and have a great patio for summer and covid winter.... and now a vegan menu!
