Quintessential Taiwanese dish

I was pleasantly surprised to find a place with vegan beef noodle soup. This is such an iconic Taiwanese dish that I highly recommend taking any visitors there to try it without any cruelty. It actually tasted quite close to the version with meat: my guess is that the "beef" was some kind of mushroom stem, not a processed plant protein. The seasonings are perfectly aligned with what you would expect from the traditional version. Just be sure to notify the staff when you order that you don't want any egg: I'm not sure if they actually put one in there by default, but it never hurts to be clear.

Pros: affordable, fast, great flavors

Cons: must explicitly ask to omit egg
