Not much choice but pretty good - Edit
Fine restaurant, but with reasonable prices, situated a few minutes away from the bus/shuttles station. Tons of tables available. I couldn't find anything else vegan around here or on Saint-Michel itself so it's pretty much the only choice, but it's a pretty good choice nonetheless.

Their vegan starter, eggplant caviar, is tasty and interesting with coral lentils and a slightly tangy herb sauce. Creative and well done.
Their vegan main is a simple grilled vegetables dish. Quite boring, but alright.
Their sorbets might also be vegan, but I didn't ask.
These two cost 10 15 which is quite expensive, but average compared to the touristy area.
Pros: Convenience: labeled vegan options, Tasty and filling, Good location
Cons: Boring main dish, Serve lamb but what can you do...
